Cooking in Bulk



I've decided to make use of this long holiday weekend by cooking in bulk. My first adventure? Breakfast burritos.
Cooking in bulk is a great way to have tasty, homemade food in much less time. One thing I still hate about cooking (even after overcoming my initial hatred) is how long it takes, so I'm all about saving time. It also ensure's that you have healthy options at your fingertips when crisis happens. For Ed, not having easy food around the house is a great reason to use symptoms, whether that means binging, or just not eating at all.

Here's what I used in the burritos:
Black beans (that I had frozen from the last time I cooked black beans)
Cheddar cheese
Eggs
Potatoes
Japelenos
Tortillas

I used different varieties of the above ingredients each time:
1) Potato, bean, cheese
2) Potato, bean, cheese, egg
3) Egg, bean, cheese
4) Egg, potato, cheese

Once I rolled each of the burritos up I wrapped them in wax paper and taped them closed. I labeled each one and put them all in a ziplock in the freezer.

  1. Egg options don't always freeze as well as I'd like but I put sauteed mushroom, onions, Turkey sausage and cheese in greased muffin tins, add beaten egg and bake then freeze. You can microwave in 30 seconds or so. Brown rice is good too because it takes so long to cook. We also freeze batches of grilled chicken.

  2. I love the chicken idea! I hate cooking meat, especially handling raw chicken. So doing it all at once would be great!!

  3. C, any feedback as to how the breakfast burritos survive freezing, thawing and reheating? This would be good for me because the boys eat breakfast burritos every day. And I do tire of making them from scratch. Marina is totally out of my league, though:)

    I wanted to wait until I had tried the different varieties before I responded. The ones without egg were excellent. Perfectly reheatable and tasted just like they would if I had cooked them fresh. The ones with egg have mixed reviews in this house. I think the egg is kind of strange, perhaps the texture changes? I'm not sure what it is, because Matt says he likes them.
    Hope that helps. As far as Marina, she's out of my league too. She's the cooking queen!
